Poverty is the type of problem that has numerous causes and consequences, and needs a multi-pronged approach for solutions.
In poverty-stricken areas, access to affordable, healthy food is a major issue – one that goes on to cause more issues, like diabetes from a chronic consumption of unhealthy food.
Jamie Holding Eagle studies public health. She’s in a master’s degree program at NDSU. She’s particularly interested in food, and the barriers to healthy food.
She works to grow ancestral food – the traditional food of America’s indigenous peoples, and educate people who didn’t grow up eating that way on how to prepare it.
She visited with Prairie Public’s Ashley Thornberg.
